Tomato paste

Q. Why does the label say only 28% tomato when other sauces say 54% or 75%?
A. Because the numbers are in different units. FSSAI requires every brand to declare the exact form of tomato used paste or puree. We use paste, which is puree with the water removed. 28% tomato paste is the equivalent of 75%+ tomato puree. Convert to the same unit before comparing any two labels.

Q. Is tomato paste inferior to tomato puree?
A. No. Paste is equivalent to puree, cooked further to remove water. Nothing is added in the process; water is removed. We choose paste because it gives a richer sauce without extra water. The form changes the % on the label, not the quantity or quality of the tomato.

Q. Why don't you just write 'tomatoes' on the label?
A. FSSAI requires us to name the exact form of tomato we use (Puree / Paste / Juice). Every brand must name the exact form used. We'd rather explain a precise, smaller-sounding number than use a vaguer, bigger-sounding one.

Q. How many tomatoes go into one bottle?
A. Every 320g bottle carries the tomato solids of about 450gms. The math: 320g × 28% tomato paste × 25% solids (the FSSAI minimum for paste) ÷ ~4.5% (the solids in a fresh tomato) ≈ 450g of fresh tomatoes. We removed the water, never the tomatoes.
